Tween and adult friendly Broccoli salad!

Ingredients

  • 2 florets of broccoli cut into small (1cm) pieces
  • 1 large apple diced into small pieces
  • ¼ cup sultanas
  • 1 large carrot grated
  • ½ capsicum cut in small (1cm pieces)

Optional

  • ¼ red onion diced in small pieces
  • ¼ cup walnuts or 1/3 cup slivered almonds
  • 1/3 cup grated cheese
  • 2 tablespoons of cranberries
  • 1/3 cup of blueberries

Instruction

Cut and mix! Then choose your dressing. We do separate dressings based on taste.

Dressing

1.     ½ avocado, two teaspoons of fresh emon juice, 1 tablespoon of EVOO and one teaspoon of djon mustard – mixed by hand and topped with cracked pepper

2.     2 tablespoons of Greek yoghurt, 1tablespoon of mayonnaise, a teaspoon of honey mustard, a teaspoon of lemon, 1teaspoon of crushed garlic, salt and pepper to taste

3.     2tablespoons EVOO, 1 tablespoon honey, 1 tablespoon apple cider vinegar, 1teaspoon Dijon mustard, I teaspoon crushed garlic, salt and pepper to taste – mix by hand

4.     Two tablespoons of Greek yoghurt, a teaspoon of Dijon mustard, one tablespoon EVOO, a teaspoon of crushed garlic and one teaspoon of lemon juice
