My meal prep go-to

Ingredients
  • 800gr butternut pumpkin, cubed
  • 1/2 tsp cinnamon
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • I cup of brown rice (uncooked)
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1 tbs lemon juice
  • 1 tbs olive oil
  • 1 handful rocket
  • 50g goats cheese
Instruction
  1. Cube the pumpkin and back at 170 degrees for 35 minutes
  2. Crumble goats cheese
  3. Cook brown rice as per directions (I used the Thermomix, rice basket, setting 2, 100 degrees, 40 minutes)
  4. Mix all other ingredients into a paste
  5. Assemble the pumpkin, rice and goats cheese
  6. Pour the paste/dressing over
