Light and nourishing lunch favourite

Ingredients
  • 1 cup of brown rice, uncooked
  • 1 tub of cherry tomatoes, halved
  • 1 continental cucumber, sliced
  • 1 red onion
  • 2 handfuls of spinach or rocket
  • 200 grams of Halloumi (diced)
  • the juice of one lemon
  • 4 tbsp extra virgin olive oil
  • 1 tbsp minced garlic
  • 1 tsp Dijon mustard
  • I cup of olives
  • Fresh coriander
Instruction
  1. Cube haloumi and fry on stove top (use olive oil on high and turn very quickly)
  2. Cook brown rice as per directions (I used the Thermomix, rice basket, setting 2, 100 degrees, 40 minutes)
  3. Cube onion
  4. Halve cherry tomatoes
  5. Slice cucumbers
  6. Juice the lemon then mix the juice with the olive oil and mustard to make the dressing
  7. Mix all ingredients together and pour the dressing over
  8. Add coriander
