Ingredients

  • 2 medium zucchini’s, grated and dried (place between paper towel and squeeze moisture out)
  • I can of corn cornels drained
  • I cup of wholemeal plain flour
  • I teaspoon of baking powder
  • I teaspoon of crushed garlic
  • I teaspoon of onion powder
  • 4 shallots cut finely
  • I teaspoon of mixed herbs
  • 3 tablespoons finely grated parmesan
  • I egg
  • Fresh chives
  • Salt and pepper to taste

Instruction

  • Mix together with a wooden spoon and form into balls.
  • Cook in a fry pan on medium heat with olive oil spray.
  • Flatten the balls
  • Turn when browned. Cooking time is about 6 minutes.

Can refrigerate for up to five days.
