Ingredients
- 2 medium zucchini’s, grated and dried (place between paper towel and squeeze moisture out)
- I can of corn cornels drained
- I cup of wholemeal plain flour
- I teaspoon of baking powder
- I teaspoon of crushed garlic
- I teaspoon of onion powder
- 4 shallots cut finely
- I teaspoon of mixed herbs
- 3 tablespoons finely grated parmesan
- I egg
- Fresh chives
- Salt and pepper to taste
Instruction
- Mix together with a wooden spoon and form into balls.
- Cook in a fry pan on medium heat with olive oil spray.
- Flatten the balls
- Turn when browned. Cooking time is about 6 minutes.
Can refrigerate for up to five days.
