Delicious breakfast slice when you are on the go!

Ingredients

  • 2 large bananas, ripened and mashed
  • 2 tablespoons 100% natural crunchy peanut butter
  • 50gr peanuts
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened almond milk
  • 2 cups wholemeal self-raising flour
  • 2 cups traditional oats
  • 2 scoops vanilla, plant-based protein powder
  • 300gr frozen blueberries
  • 200gr stewed apples (no sugar)
  • 2 tablespoons of honey or rice malt syrup
  • 2 eggs
  • 1 teaspoon cinnamon, 1 teaspoon nutmeg, 1 teaspoon allspice
  • Walnuts (optional) as topping*
Instruction

Preheat oven to 180 degrees (fan forced)

Mix bananas, peanuts, peanut butter in a Thermomix or food processor on high for about 30 seconds.

Add milk, protein powder, flour, vanilla extract, apples, eggs and spices and mix for 2 minutes on 7 (or medium high if not using a Thermomix).

Add honey and mix for 10 seconds on high.

Pull bowl off and hand mix in blueberries and oats.

Cook in muffin tray (20 minutes) or as a slice (35 minutes).

Can be eaten fresh for 5 days or frozen for up to three months.

*note slice has walnuts on top, muffins don’t (as little Miss J doesn’t like walnuts)
