Friday night footy fave!

Ingredients
  • 500g roast pumpkin
  • 2 tbsp pine nuts
  • 80g crumbled goats cheese
  • 500g chopped onion
  • 3 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • Herbs and spice of choice (I used Zatar and fresh Rosemary)
  • Wholemeal sourdough wrap as the base
Instruction
  1. Cut pumpkin into small cubes and spray with olive oil. Roast on 180 degrees for 35 minutes.
  2. To caramelise onions, mix chopped onion with balsamic vinegar and olive oil in Thermomix for 30 minutes on high speed two. Blend for 3 seconds on speed 8 at the end.
  3. Spread tomato paste on wholemeal sourdough wrap.
  4. Spread onions and place pumpkin pieces on the base.
  5. Spread pine nuts and crumble goats cheese.
  6.  Put herbs and spices on top to taste.
  7.  Bake at 180 for 15 minutes.
