Friday night footy fave!
Ingredients
- 500g roast pumpkin
- 2 tbsp pine nuts
- 80g crumbled goats cheese
- 500g chopped onion
- 3 tbsp balsamic vinegar
- 1 tbsp olive oil
- 2 tbsp tomato paste
- Herbs and spice of choice (I used Zatar and fresh Rosemary)
- Wholemeal sourdough wrap as the base
Instruction
- Cut pumpkin into small cubes and spray with olive oil. Roast on 180 degrees for 35 minutes.
- To caramelise onions, mix chopped onion with balsamic vinegar and olive oil in Thermomix for 30 minutes on high speed two. Blend for 3 seconds on speed 8 at the end.
- Spread tomato paste on wholemeal sourdough wrap.
- Spread onions and place pumpkin pieces on the base.
- Spread pine nuts and crumble goats cheese.
- Put herbs and spices on top to taste.
- Bake at 180 for 15 minutes.
