I made these for my daughter’s rep netball team for energy on tournament day!
Ingredients
- 100gr traditional (not quick) oats - soaked in enough water to cover them (preferably overnight)
- 2 scoops of vegan vanilla protein powder
- 250gr mixed nuts (I use cashews, peanuts, Brazil nuts, pistachios and almonds)
- 100gr pitted dates
- 50gr coconut (and more for rolling)
- 100gr high cacao chocolate (I use Aldi two deck)
- 2 tablespoons cacao powder or cocoa
- 1 teaspoon vanilla essence
- 50gr flaxseed meal
- 50gr psyllium husk
- 25gr black chia seeds
Instruction
Mix in a food processor or Thermomix on high until it is a firm paste. If needed, add a small amount of water. Roll in small balls and then roll in coconut.
These are high protein, low sugar and energy giving. They’re a bit moorish so you need to manage portions but they are great for sustained energy!
