I made these for my daughter’s rep netball team for energy on tournament day!

Ingredients

  • 100gr traditional (not quick) oats - soaked in enough water to cover them (preferably overnight)
  • 2 scoops of vegan vanilla protein powder
  • 250gr mixed nuts (I use cashews, peanuts, Brazil nuts, pistachios and almonds)
  • 100gr pitted dates
  • 50gr coconut (and more for rolling)
  • 100gr high cacao chocolate (I use Aldi two deck)
  • 2 tablespoons cacao powder or cocoa
  • 1 teaspoon vanilla essence
  • 50gr flaxseed meal
  • 50gr psyllium husk
  • 25gr black chia seeds

Instruction

Mix in a food processor or Thermomix on high until it is a firm paste. If needed, add a small amount of water. Roll in small balls and then roll in coconut.

These are high protein, low sugar and energy giving. They’re a bit moorish so you need to manage portions but they are great for sustained energy!
