Delicious for lunch or dinner

Ingredients

  • 120gr SHINE chicken breast schnitzel cubed (can be substituted with tofu schnitzel) *see note below
  • 3 hard boiled eggs halfed
  • 1 cup of cos lettuce
  • 30gr flaked Parmesan
  • 10 anchovies (removed for vegetarians and replaced with 10 green pitted olives)
  • 1/4 red capsicum diced
  • 2 pieces of sourdough bread toasted with olive oil spray and cut into cubes
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon SHINE seed mix

Dressing

Mix together in a jug

  • 1 tablespoon fresh lemon or lime juice
  • 1 teaspoon grated garlic
  • 2 tablespoons EVOO
  • Fresh parsley to taste

Use dressing to taste. I always offer it on the side.

Optional additions

  • Cherry tomatoes
  • Cucumber
  • Carrot
  • Olives
  • Gherkins

Instruction

Assemble together and serve!

Over 60gr of protein (tofu version 80gr chicken version) and low fat, low sugar. What’s not to love!
