Ingredients
  • 800 gram peeled pumpkin
  • 1 red onion
  • 1 red capsicum
  • Three handfuls of rocket or spinach
  • Parsley (at discretion)
  • 1/2 lemon
  • One cup of wholemeal quinoa
  • 2 tbsp extra virgin olive oil (Australian)
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 2 tsp honey (or for vegan maple syrup)
  • 1 tbsp extra virgin olive oil
Instruction
  1. Cube pumpkin, slice onion and capsicum
  2. Place honey, spices and olive oil in a bowl
  3. Toss in the pumpkin and coat with the mixture and place on an oven tray
  4. Place sliced onion and capsicum on separate tray
  5. Bake at 170 fan forced for 35 minutes
  6. Cook quinoa as directed on packet
  7. Cool and assemble all ingredients
  8. Serve immediately or put in an air tight container in the fridge.
