Brekkie is sorted

Ingredients
  • ¼ red capsicum, diced
  • ¼ yellow capsicum, diced
  • 2 shallots, cut fine
  • 6 mushrooms, chopped
  • Handful of fresh English spinach
  • 3 eggs
  • 2 tbl grated cheese of choice (Donna uses lactose free)
  • 75ml almond milk
Instruction
  1. Mix the eggs, milk and cheese separate to the rest of the ingredients
  2. Add light olive oil to a pan and heat. Sauté the capsicum, shallots and mushrooms for roughly 4 minutes
  3. Add the egg mixture and stir continuously
  4. Add the spinach, and cook for a few more minutes.
  5. Serve with chives and pepper to taste. I love mine with rye sourdough!
