Delicious for morning or afternoon tea

Ingredients
  • 4 – 5 over ripe bananas
  • 320g wholemeal SR flour
  • 2 eggs
  • I cup of unsweetened almond coconut milk
  • I tablespoon of vanilla bean paste (can substitute with vanilla essence)
  • I cup of dates
  • I teaspoon cinnamon
  • I teaspoon nutmeg
  • I teaspoon baking power

OPTIONAL 3 tablespoons of rice malt syrup (can substitute maple syrup)

Top with walnuts, pecans or other nut choice

Instruction
  1. Mix everything on high in a Thermomix or food processor
  2. Muffin size, bake for 25 minutes at 180 degrees fan forced
  3. Cake size bake for 40 minutes
