Delicious for morning or afternoon tea
Ingredients
- 4 – 5 over ripe bananas
- 320g wholemeal SR flour
- 2 eggs
- I cup of unsweetened almond coconut milk
- I tablespoon of vanilla bean paste (can substitute with vanilla essence)
- I cup of dates
- I teaspoon cinnamon
- I teaspoon nutmeg
- I teaspoon baking power
OPTIONAL 3 tablespoons of rice malt syrup (can substitute maple syrup)
Top with walnuts, pecans or other nut choice
Instruction
- Mix everything on high in a Thermomix or food processor
- Muffin size, bake for 25 minutes at 180 degrees fan forced
- Cake size bake for 40 minutes
