This doesn’t look pretty but it is very tasty, low fat, high protein and comforting. It feels like a cheat meal, but it isn’t.
Start with six vegan sausages – you can buy these premade just look for high quality, high protein, low salt and low fat.
Potato mash layer
I cook this in the Thermomix on varoma, speed 2 for 30 minutes. If you don’t have a Thermomix boil potatoes on the stove and then mix to a runny consistency.
Curry layer
Saute onion, garlic and olive oil for 5 minutes, then add the sliced sausages until browned. Add the remaining ingredients and cook for 12 minutes on medium.
Instruction
Layer potato mash then curry on top.
