The below makes 14 portions.

Ingredients

  •  Olive oil spray
  •  Sweet potato
  •  Pumpkin
  •  Leeks
  •  Capsicum
  • Zucchini
  •  Avocado
  • Broccoli
  • Red onion
  • Garlic
  • White beans
  • 12 eggs
  • Milk (of choice)
  • Cheese (of choice)
Instruction
  1.  Roast up a variety of vegetables with olive oil spray - I used sweet potato, pumpkin, leeks, capsicum, zucchini. Place in glass tray, add avocado, broccoli.
  2. Sauté one red onion, two teaspoons of crushedgarlic and 1/4 capsicum (roughly chopped) add one can of drained white beans.
  3. Mix 12 eggs and 50ml of your milk of choice and pour it over the vegetables. Add cheese of your choice. Bake for 30 minutes at 170.
  4. Let it cool and then cut into pieces and store in the fridge in an airtight container. There is breakfast for the next week sorted!
