Winter warmer

Ingredients
  • Sourdough roll, cut in half
  • Goats cheese or vegan cheese spread
  • Handful of spinach
  • Leftover roast veggies (I used capsicum, pumpkin, sweet potato and eggplant – from my baked dinner the night before)
  • Basil, parsley and oregano
  • A couple of sliced olives
  • Pepper to season
Instruction

Simply toast under the grill for the desired time.
