Winter warmer
Ingredients
- Sourdough roll, cut in half
- Goats cheese or vegan cheese spread
- Handful of spinach
- Leftover roast veggies (I used capsicum, pumpkin, sweet potato and eggplant – from my baked dinner the night before)
- Basil, parsley and oregano
- A couple of sliced olives
- Pepper to season
Instruction
Simply toast under the grill for the desired time.
